- 500g chicken thighs, cut into bite-sized pieces
- 2 tbsp fish sauce
- 2 tbsp sugar
- 1 tbsp minced ginger
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- 1/2 cup water
- 1/2 tsp black pepper
- 1 red chili, sliced (optional)
- 2 green onions, chopped
- Heat oil in a pan over medium heat. Add ginger and garlic, sauté for 30 seconds.
- Add chicken and cook until lightly browned, about 5 minutes.
- Stir in sugar and cook until it caramelizes, about 2 minutes.
- Pour in fish sauce and water, then reduce heat to low. Simmer for 15 minutes.
- Add black pepper and chili if using. Cook for another 5 minutes.
- Garnish with green onions and serve hot.
