Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs (finely crushed)
  • 5 tablespoons unsalted butter (melted)
  • 2 tablespoons granulated sugar (for crust)
  • 16 ounces cream cheese (2 packages, softened to room temperature)
  • 2/3 cup granulated sugar (for filling)
  • 1 whole vanilla bean (split and seeds scraped) or 1 tablespoon pure vanilla bean paste
  • 2 large eggs (room temperature)
  • 2 large egg yolks (room temperature)
  • 1/2 cup heavy cream (plus extra for brûlée topping)
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar (for torched topping, per cupcake)
  • Instructions

  • Preheat your oven to 325°F (160°C). Line a 12-cup muffin tin with cupcake liners.
  • Make the crust: Mix the graham cracker crumbs, melted butter, and 2 tablespoons sugar in a small bowl. Press about 1 tablespoon of this mixture into the bottom of each cupcake liner firmly.
  • Prepare the filling: Beat the cream cheese with a mixer on medium speed until smooth and creamy, about 2-3 minutes. Gradually add 2/3 cup sugar and mix until fully incorporated.
  • Add vanilla bean seeds or vanilla bean paste into the cream cheese mixture and mix well.
  • Add whole eggs one at a time, beating on low speed until combined each time, then add the yolks and mix gently.
  • Pour in heavy cream and salt, stirring gently just to combine. Batter should be smooth and slightly thick but pourable.
  • Divide the filling evenly over the crust in the liners, leaving space at the top.
  • Bake for 22-25 minutes until centers are almost set but slightly wobbly.
  • Remove from oven, cool to room temperature, then refrigerate at least 3 hours or overnight.
  • Before serving, sprinkle about 1 teaspoon sugar over each chilled cupcake and caramelize using a kitchen torch until a golden-brown crust forms. Let harden before serving.
