1 lb boneless, skinless chicken breast, cubed
1 cup pineapple chunks (fresh or canned)
1 bell pepper, sliced
1 small onion, sliced
2 cloves garlic, minced
1/4 cup ketchup
2 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp brown sugar
1 tbsp cornstarch
2 tbsp vegetable oil
1/4 cup water
Instructions
Heat oil in a large pan over medium-high heat. Add chicken and cook until browned, about 5 minutes. Remove from pan.
In the same pan, sauté garlic, bell pepper, and onion for 2-3 minutes until softened.
Add pineapple chunks and stir for 1 minute.
In a small bowl, mix ketchup, soy sauce, rice vinegar, brown sugar, cornstarch, and water.
Pour the sauce into the pan and stir until it thickens, about 2 minutes.
Return the chicken to the pan, coat with sauce, and cook for another 2-3 minutes.
Serve hot over rice.

Use fresh pineapple for a brighter flavor.
