  • 2 cloves garlic, minced
  • 1 cup chopped kale or spinach
  • 1/2 cup crumbled feta cheese (optional for a savory tang)
  • 1/3 cup chopped walnuts or pecans (toasted for extra flavor)
  • 1/2 cup cooked sausage or ground turkey (optional, pre-cooked and crumbled)
  • 1/4 cup dried cranberries or raisins (adds a sweet contrast)
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme or sage
  • Salt and pepper to taste
  • 1/4 cup vegetable or chicken broth (for moisture)
  • Instructions

  • Preheat your oven to 375°F (190°C). Cut the tops off the mini pumpkins to create lids and scoop out all seeds and stringy parts until the inside is clean but keep the pumpkin walls intact.
  • Lightly brush the inside and outside with olive oil and sprinkle a bit of salt. Place them cut side up on a baking sheet and roast for 15 minutes.
  • Heat olive oil in a pan over medium heat. Sauté onions until softened, about 5 minutes. Add garlic and cook for 30 seconds until fragrant.
  • Stir in kale or spinach and cook until wilted. Add cooked sausage if using, then toss in quinoa, dried cranberries, nuts, thyme, salt, and pepper.
  • Pour the broth into the pan, stir to combine, and let it cook down for 2 minutes to get everything well blended.
  • Fill each pumpkin generously with the mix and top with crumbled feta cheese.
  • Place the pumpkin lids back on top and arrange pumpkins on the baking sheet.
  • Roast in the oven at 375°F for about 25 to 30 minutes until the pumpkins are tender and the filling is warm through.
