  • Cook the chopped bacon in a large pot or Dutch oven over medium heat until the fat renders and bacon is crispy but not burnt, about 5-7 minutes.
  • Add the diced onion to the bacon fat, stirring occasionally until soft and translucent, about 3 minutes. Then add the minced garlic and cook for another 30 seconds to 1 minute until fragrant.
  • Add the trimmed and cut green beans to the pot and stir to coat them in the bacon fat.
  • Pour enough chicken broth into the pot to just cover the beans.
  • Season with salt, black pepper, and smoked paprika. Stir to combine.
  • Bring the pot to a simmer, then reduce heat to low. Cover and cook gently for 45 minutes to 1 hour, stirring every 15 minutes to prevent sticking and ensure even cooking.
  • Just before serving, stir in the apple cider vinegar and, if desired, the optional sugar or brown sugar to balance acidity.
