  • Instructions

  • Combine chopped corned beef, finely chopped sauerkraut, and Swiss cheese in a large mixing bowl.
  • Add beaten eggs and mix gently but thoroughly to coat everything.
  • Sprinkle in half of the breadcrumbs and fold in to achieve a sticky, moldable consistency.
  • Cover mixture and refrigerate for at least 30 minutes to set.
  • Shape the mixture into 1 to 1½ inch balls, then roll each ball in the remaining breadcrumbs for a crunchy coating.
  • Heat oil to 350°F (175°C) and fry balls in batches for 3 to 4 minutes until golden brown. Drain on paper towels.
  • Whisk together mayonnaise, ketchup, sweet pickle relish, horseradish, hot sauce, Worcestershire sauce, and smoked paprika until smooth for the spicy Thousand Island sauce.
