Ingredients

Scale
  • 1 pound queso blanco cheese, shredded or diced into small cubes
  • 1 cup whole milk or half-and-half
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeded and finely chopped (optional)
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon chili powder
  • Salt to taste (start with 0.5 teaspoon and adjust)
  • Fresh cilantro, chopped (for garnish)
  • Instructions

  • Melt the butter over medium heat in a medium saucepan.
  • Add the chopped onion and jalapeño. Sauté for about 3-4 minutes until the onion is soft and translucent but not browned.
  • Stir in the minced garlic and cook for another 30 seconds until fragrant.
  • Reduce the heat to low. Gradually add the shredded queso blanco cheese, stirring continuously.
  • Slowly pour in the milk or half-and-half while stirring to prevent the cheese from clumping.
  • Keep stirring gently until the cheese is fully melted and the mixture is smooth, typically about 5-7 minutes.
  • Mix in the ground cumin, chili powder, and salt. Taste and adjust seasoning as needed.
  • Transfer the dip to a warm serving bowl. Sprinkle chopped fresh cilantro on top.
