  • Instructions

  • Prepare the pumpkin pie filling by mixing pumpkin purée, brown sugar, beaten eggs, cinnamon, ginger, nutmeg, salt, vanilla extract, and evaporated milk in a large bowl until well blended.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Soften soft taco shells by warming them wrapped in foil in the oven for about 5 minutes or crisp taco shells by brushing shells with melted butter or oil and baking on the oven rack for 7-8 minutes until golden and firm.
  • Pour the pumpkin filling into a greased pie dish or oven-safe shallow pan and bake for 40-45 minutes until set but slightly jiggly in the center.
