  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 cup heavy cream
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 ½ cups rolled oats (old-fashioned oats)
  • ¾ cup all-purpose flour
  • ¾ cup packed light brown sugar (for topping)
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt (for topping)
  • ½ cup (1 stick) unsalted butter, cold and diced into small cubes
  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the pumpkin puree, packed brown sugar, eggs, heavy cream, pumpkin pie spice, vanilla extract, and a pinch of salt until smooth and well combined.
  • Pour the filling into a greased 9-inch square baking dish or similar size casserole dish. Even it out with a spatula so it spreads uniformly.
  • In a separate bowl, combine the oats, all-purpose flour, brown sugar, cinnamon, and salt. Add the cold diced butter cubes.
  • Use your fingers or a pastry cutter to cut the butter into the oat mixture until the mixture looks crumbly and butter pieces are pea-sized.
  • Sprinkle the topping evenly over the pumpkin filling.
  • Bake for about 50-60 minutes, or until the topping is golden brown and the pumpkin filling is set but still slightly jiggly in the center.
  • Let it cool on a wire rack for at least 15 minutes before serving.
