  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large eggs
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a madeleine pan.
  2. Whisk eggs and sugar until pale and thick.
  3. Add vanilla and lemon zest (if using). Mix well.
  4. Sift flour, baking powder, and salt into the egg mixture. Fold gently.
  5. Pour in melted butter and mix until just combined.
  6. Spoon batter into the madeleine molds, filling each 3/4 full.
  7. Bake for 10-12 minutes until edges are golden.
  8. Remove from pan and cool on a rack.

Notes

  • Chill the batter for 1 hour for better texture.
  • Use room-temperature eggs for best results.
  • Dust with powdered sugar before serving.
