- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers, drained
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Season chicken breasts with salt and pepper, then dredge in flour.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Cook chicken until golden brown, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds.
- Pour in chicken broth and lemon juice, scraping up any browned bits.
- Add capers and simmer for 2-3 minutes.
- Return chicken to the skillet and cook for another 2 minutes to heat through.
- Sprinkle with parsley before serving.
