- 2 lbs potatoes, peeled and cubed
- 1/4 cup Dijon mustard
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup diced red onion
- Boil potatoes in salted water until tender, about 10-12 minutes. Drain and let cool.
- In a bowl, whisk together mustard, olive oil, vinegar, salt, and pepper.
- Add cooled potatoes, parsley, and red onion to the dressing. Toss gently to coat.
- Chill for at least 30 minutes before serving.
