- 1 cup brown rice
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
- Rinse the brown rice under cold water.
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add bell pepper and cook for 2-3 minutes.
- Stir in brown rice, cumin, chili powder, and paprika. Cook for 1 minute.
- Pour in vegetable broth and diced tomatoes. Bring to a boil.
- Reduce heat, cover, and simmer for 40-45 minutes or until rice is tender.
- Stir in black beans and cook for another 5 minutes.
- Season with salt and pepper. Garnish with fresh cilantro before serving.
Notes
- For extra spice, add a diced jalapeño.
- Store leftovers in an airtight container for up to 3 days.
- Serve with avocado or lime wedges for added flavor.
