  • 1 cup cherry tomatoes, whole
  • 3 tablespoons extra virgin olive oil

  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the chopped red and yellow bell peppers, zucchini slices, eggplant cubes, red onion wedges, and whole cherry tomatoes with olive oil.
