- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 6 low-carb tortillas
- 1 cup enchilada sauce
- Preheat oven to 350°F.
- In a bowl, mix chicken, 1/2 cup cheese, sour cream, green onions, cilantro, cumin, chili powder, salt, and pepper.
- Fill each tortilla with the chicken mixture and roll tightly.
