- 2 cups granulated sugar
- 1 tbsp light corn syrup
- 1/2 cup water
- 3 tbsp unflavored gelatin
- 1/2 cup cold water
- 1/2 cup strawberry puree
- 1 tsp vanilla extract
- 1/4 tsp salt
- Powdered sugar for dusting
- Line a baking dish with parchment paper and dust with powdered sugar.
- In a saucepan, combine sugar, corn syrup, and 1/2 cup water. Cook over medium heat until sugar dissolves.
- In a separate bowl, sprinkle gelatin over 1/2 cup cold water. Let it sit for 5 minutes.
- Once the sugar mixture reaches 240°F (115°C), remove from heat.
- Pour the hot sugar syrup into the gelatin mixture while whisking.
- Add strawberry puree, vanilla, and salt. Beat on high speed for 10-12 minutes until thick and fluffy.
- Spread the mixture into the prepared dish and let set for 4 hours.
- Cut into squares and dust with powdered sugar.
