  • Optional: zest of 1 lemon

  • Preheat your oven to 350°F (175°C). Grease a 9-inch square baking dish with a bit of oil or butter.
  • Mix the dry ingredients in a large bowl: rolled oats, protein powder, chopped almonds, baking powder, cinnamon, and salt until well combined.
  • Whisk the wet ingredients separately: beat the eggs with almond milk, maple syrup, and vanilla extract until smooth. Add lemon zest if using.

  • Fold in most of the berries carefully, reserving a handful to scatter on top.
