- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup crumbled feta cheese
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1 tbsp olive oil
- 1 cup orzo
- 2 cups chicken broth
- 1 lemon (zested and juiced)
- Fresh parsley for garnish
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground chicken, breadcrumbs, feta, oregano, garlic powder, salt, pepper, and egg.
- Shape into meatballs and place on a baking sheet.
- Bake for 20-25 minutes until cooked through.
- Meanwhile, heat olive oil in a pot and toast orzo for 2 minutes.
- Add chicken broth, lemon zest, and juice. Simmer until orzo is tender.
- Serve meatballs over orzo, garnished with parsley.
