  • ½ cup dried figs (chopped into small pieces)
  • 2 tablespoons honey (for drizzling and a hint of sweetness)
  • 1 teaspoon fresh thyme leaves (finely chopped, optional but recommended)
  • 1 egg (large, beaten, to brush on pastry for a golden finish)
  • Pinch of sea salt (to enhance flavors)
  • Optional: 2 tablespoons chopped walnuts or pecans for extra crunch
  • Instructions

  • Preheat your oven to 400°F (200°C).
  • On a lightly floured surface, gently roll your puff pastry sheet into a rough 10×10 inch square.
  • Use a spatula to evenly spread the softened goat cheese over the entire pastry surface.
  • Sprinkle the chopped figs evenly over the goat cheese. Add optional chopped nuts if desired.
  • Lightly sprinkle fresh thyme leaves and a pinch of sea salt over the figs.
  • Drizzle the 2 tablespoons of honey evenly across the top.
  • Starting from one edge, carefully roll the pastry into a tight log.
  • Cut the log into 12 equal slices, about ¾-inch thick each.
  • Line a baking sheet with parchment paper or a silicone mat. Place each pinwheel cut side up, spaced about an inch apart.
  • Brush each pinwheel lightly with the beaten egg for a golden crust.
