  • 4 cloves garlic, minced
  • 1/3 cup soy sauce

  • 1 teaspoon freshly grated ginger

  • In a bowl, mix together the soy sauce, brown sugar, minced garlic, rice vinegar, sesame oil, grated ginger, and black pepper. Add the chicken thighs and turn them so each piece is coated well. Cover and let the chicken marinate in the fridge for at least 30 minutes, ideally up to 2 hours.
  • Heat the vegetable oil in a large skillet over medium-high heat. You want the pan hot enough to get a nice sear but not so hot that it burns the sugar in the marinade.
  • Remove the thighs from the marinade, letting the excess drip off. Place the chicken in the skillet skin-side down. Cook without moving for about 5-7 minutes, until the skin is golden brown and crispy.
  • Turn the chicken thighs over and pour in the remaining marinade. Reduce the heat to medium-low and cover the pan. Let the chicken cook for another 10-12 minutes, or until a meat thermometer reads 165°F (74°C) at the thickest part.
  • Remove the cover and increase heat slightly to let the marinade thicken into a sticky glaze, spooning it over the chicken as it cooks for 2-3 minutes.
