  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth (low sodium preferred)
  • 1 cup half-and-half or heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • Optional: 1/4 cup chopped fresh parsley for garnish
  • Instructions

  • Place a large pot over medium heat and melt the butter until it’s bubbly.
  • Add the diced onion and cook for about 4-5 minutes until soft and translucent.
  • Stir in the minced garlic and cook for 1 minute, being careful not to burn it.
  • Add the sliced mushrooms and cook for 6-8 minutes, stirring occasionally, until they release their juices and turn golden brown.
  • Sprinkle the flour over the mushrooms and stir well to coat. Let this cook for 2 minutes to thicken the soup.
  • Slowly pour in the chicken broth while stirring to avoid lumps. Bring the mixture to a gentle boil and let it simmer for 5 minutes.
  • Lower the heat and stir in the half-and-half or cream. Add the shredded rotisserie chicken and thyme.
  • Season with salt and pepper to taste. Simmer for another 5-7 minutes, stirring occasionally, to combine flavors.
  • Optionally, sprinkle fresh parsley right before serving for brightness.
