  • Heat the pan: Warm your olive oil or butter over medium heat in a large skillet. Wait until you see it shimmer or melt fully before adding anything.
  • Cook the chicken: Toss in the chicken pieces with a pinch of salt and pepper. Cook until golden on all sides but still juicy inside, about 5–7 minutes. Remove chicken and set aside on a plate.
  • Sauté the veggies: In the same pan, add the chopped onion and sliced mushrooms. Stir and cook for about 5 minutes until the onion softens and mushrooms release their juices. Add minced garlic last and cook a minute more so it doesn’t burn.
