  • Preheat your oven to 375°F (190°C). This ensures your dish bakes evenly.
  • Cook the ground beef: In a large skillet over medium heat, add the chopped onion and garlic. Sauté until soft, about 3 minutes. Add the ground beef, cumin, chili powder, salt, and pepper. Brown the beef until fully cooked, breaking it up with a spoon. Drain any excess fat.
  • Mix in enchilada sauce: Pour half of the enchilada sauce into the cooked beef mixture. Stir well to coat the beef evenly.
  • Prepare the filling: Take a tortilla and spoon about 1/4 cup of the beef mixture near the center. Sprinkle a generous handful of cheddar and Monterey Jack cheese on top, plus a few olive slices if you like.
