  • 1 (10-ounce) can red enchilada sauce
  • 1 cup shredded cheddar cheese, packed
  • 1 cup shredded Monterey Jack cheese, packed
  • 8 soft flour tortillas, 8-inch diameter
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and black pepper to taste
  • Optional garnish: chopped fresh cilantro, sliced green onions

  • Preheat your oven to 375°F (190°C).
  • Cook the beef and onion: Heat a large skillet over medium heat. Add ground beef and chopped onion, stirring as it browns. Break apart the meat with a wooden spoon so it cooks evenly.
  • Add garlic and seasonings: Once beef is browned and onion is translucent, stir in the minced garlic, cumin, chili powder, salt, and pepper. Cook for another minute until fragrant. Remove from heat.
  • Mix cheese and sauce: In a bowl, combine shredded cheddar and Monterey Jack cheeses. Stir about 1/3 of your enchilada sauce into the cooked beef mixture to keep it moist.
  • Fill the tortillas: Grab a tortilla, spoon approximately 2-3 tablespoons of the beef mixture into the center, then sprinkle some cheese on top. Roll it up tightly but gently to avoid cracking the tortilla.
  • Arrange enchiladas in baking dish: Lightly grease a 9×13-inch baking dish. Place the rolled enchiladas seam-side down in a single layer.
  • Cover with sauce and cheese: Pour the remaining enchilada sauce evenly over the enchiladas, then sprinkle the rest of the cheese on top.
  • Bake uncovered for 20-25 minutes until cheese is melted and bubbly, and sauce is heated through.
  • Let rest a few minutes before serving to help the dish set.
