  • Wash and slice the apples into about 1/4-inch thick rounds, removing any seeds or core bits. Pat them dry with paper towels.
  • In a medium saucepan, melt the butter over medium heat.
  • Once butter is melted, add the brown sugar and stir constantly until the mixture bubbles up and smooths out, about 3-4 minutes.
  • Slowly pour in the heavy cream while stirring continuously; reduce heat to low and keep stirring until the caramel thickens slightly, about 3-5 minutes.
  • Remove from heat, stir in vanilla extract and sea salt (if using), then let the caramel cool for 5 minutes to thicken but stay pourable.
  • Using a toothpick or small skewer, dip each apple slice into the warm caramel, coating both sides. Let excess caramel drip back into the pan.
  • Place caramel-coated apple slices on a parchment-lined baking sheet and work quickly to coat all slices before caramel cools.
  • Chill the tray in the fridge for 15-20 minutes, allowing the caramel to firm up but remain chewy.
