A simple and delicious recipe for bean and cheese enchiladas, perfect for a quick dinner.

  • 1 can (15 oz) refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 corn tortillas
  • 1 can (10 oz) enchilada sauce
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix refried beans, cumin, chili powder, garlic powder, and salt.
  3. Heat vegetable oil in a skillet over medium heat. Lightly fry each tortilla for 10 seconds per side.
  4. Spread a spoonful of the bean mixture on each tortilla, sprinkle with cheese, and roll tightly.
  5. Place rolled tortillas seam-side down in a baking dish.
  6. Pour enchilada sauce over the top and sprinkle with remaining cheese.
  7. Bake for 20 minutes or until cheese is melted and bubbly.
