  • 1 large head of green cabbage (whole, with intact leaves for rolling)
  • 1 cup cooked brown rice or quinoa (fluffy, not sticky)
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, finely chopped
  • 1 carrot, grated
  • 1 cup cooked lentils (green or brown), drained and rinsed
  • 1/2 cup chopped fresh parsley
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 1/2 cups tomato sauce (smooth and plain, not chunky)
  • 1 tablespoon olive oil
  • 1 cup vegetable broth (low sodium preferred)
  • Juice of 1 lemon (about 2 tablespoons)
  • Instructions

  • Carefully loosen cabbage leaves from the head keeping them whole. Boil salted water and immerse leaves one by one for about 2 minutes until soft and flexible. Drain and cool on a clean towel.
  • Heat olive oil in skillet over medium heat. Cook diced onion until translucent, about 3-4 minutes. Add garlic and mushrooms, cook 5 minutes until mushrooms shrink. Stir in grated carrot and cook 2 more minutes. Turn off heat, then mix in cooked rice or quinoa, lentils, parsley, smoked paprika, oregano, salt, and pepper until combined.
  • Lay a softened cabbage leaf flat, trim thick vein if needed. Place a few tablespoons of filling near stem end, fold in sides, and roll tightly towards leaf tip. Repeat until all filling and leaves used.
  • Preheat oven to 350°F (175°C). Mix half vegetable broth and tomato sauce, pour in bottom of baking dish. Arrange rolls seam side down close together. Pour remaining tomato sauce and broth over rolls. Drizzle lemon juice evenly. Cover with foil and bake 50 minutes, ladling some sauce over rolls halfway through. Let rest 5 minutes before serving.
