A delicious pear frangipane tart with a buttery crust, almond filling, and fresh pears.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 cup almond flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 ripe pears, peeled and thinly sliced

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the crust by mixing flour, cold butter, and sugar until crumbly. Add egg yolk and mix until dough forms.
  3. Press dough into a tart pan and bake for 15 minutes.
  4. Make the frangipane by beating almond flour, sugar, softened butter, egg, and vanilla until smooth.
  5. Spread frangipane over the pre-baked crust.
  6. Arrange pear slices on top.
  7. Bake for 35-40 minutes until golden.
  8. Cool before serving.

Notes

  • Use ripe but firm pears.
  • Chill the dough before baking for a crispier crust.
