  • 1 cup canned diced tomatoes with green chilies, drained
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Juice of half a lime
  • ¼ cup chopped fresh cilantro
  • Optional toppings: shredded cheese, avocado slices, sour cream
  • Instructions

  • Heat the olive oil in a large skillet over medium heat until shimmering.
  • Add the diced onion and sauté for about 3 minutes until soft and translucent.
  • Stir in the minced garlic and cook for 30 seconds, watching closely to avoid burning.
  • Add both the red and green diced bell peppers and cook for 5 minutes, stirring occasionally until tender but still a little crisp.
  • Add the corn kernels and cook for another 2 minutes to let the sweet flavors roast slightly.
  • Add the black beans and diced tomatoes with green chilies to the skillet, stirring gently to combine.
  • Sprinkle the cumin, chili powder, smoked paprika, salt, and pepper over the mixture and stir well to evenly distribute the spices.
  • Lower the heat and let the skillet simmer uncovered for about 8-10 minutes, stirring occasionally so nothing sticks.
  • Turn off the heat and squeeze fresh lime juice over the skillet. Sprinkle chopped cilantro on top and stir lightly.
  • If desired, add favorite toppings like shredded cheese, sliced avocado, or a dollop of sour cream before serving.
