  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 cups corn kernels (fresh or frozen)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 tbsp lime juice
  • 1/4 cup chopped cilantro
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat grill or skillet to medium-high heat.
  2. Season chicken with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Grill chicken for 6-7 minutes per side or until fully cooked. Let rest before slicing.
