  • 1.5 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons honey (liquid, not creamed)
  • 3 tablespoons fresh lime juice (about 2 limes)
  • 1 teaspoon lime zest (from 1 lime)
  • 2 tablespoons olive oil, divided
  • 1 cup long grain white rice, rinsed until water runs clear
  • 2 cups low-sodium chicken broth
  • 1 large ripe avocado, peeled, pitted, and sliced
  • 1 medium red bell pepper, diced
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 1/4 cup fresh cilantro, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder

Instructions

  • In a medium bowl, whisk honey, lime juice, lime zest, 1 tablespoon olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Toss the cubed chicken until well coated. Let it marinate at room temperature for 15 minutes while you start the rice.
  • Add the rinsed rice and chicken broth to a medium saucepan. Bring to a boil, then cover and reduce to a low simmer. Let cook undisturbed for 15 minutes or until rice is tender and liquid is absorbed. Remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork.
  • Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add marinated chicken in a single layer. Cook for 5-7 minutes, turning occasionally, until chicken is golden and cooked through. Remove from heat.
  • In a bowl, gently toss diced red bell pepper, jalapeño, and chopped cilantro with a pinch of salt and pepper. Be careful not to mash the avocado slices if you plan to include them here or separately for the stacking.
  • Use a ring mold or form the stack by hand on plates. Start with a scoop of rice at the base, press lightly. Add a layer of avocado slices, then top with chicken. Spoon some of the avocado salsa on top or around the plate for color and flavor.
  • The lime within the chicken and salsa keeps everything fresh. If you need to hold it longer, keep components separate and assemble just before serving to preserve textures.
