  • 1 tablespoon olive oil
  • 1 medium onion, diced into small pieces
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix (or 2 tablespoons homemade seasoning)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 cup shredded cheddar cheese (sharp or mild, your choice)
  • 1 cup shredded Monterey Jack cheese
  • 8 small corn tortillas, cut into strips or quarters
  • 1/4 cup fresh cilantro, chopped (optional)
  • Salt and pepper to taste
  • Optional toppings: sliced green onions, sour cream, salsa, avocado slices

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add diced onions and cook for 3–4 minutes until soft. Add garlic and cook for 30 seconds until fragrant.
  • Add ground turkey, breaking it up with a spatula. Cook until no pink remains, about 6–8 minutes. Drain any excess fat if needed.
  • Sprinkle the taco seasoning over the turkey and stir it in well. Pour in 1/4 cup water, stir, and simmer for 5 minutes until sauce thickens slightly.
  • Stir in black beans, corn, and diced tomatoes with chilies. Cook for 2–3 minutes to heat through, then remove from heat.
  • Spread half the tortilla pieces in the bottom of a greased 9×13 inch baking dish. Spoon half the turkey mixture over the tortillas. Sprinkle with half the cheddar and Monterey Jack cheeses. Repeat layers once more – tortillas, turkey mixture, then cheeses on top.
  • Bake uncovered for 20–25 minutes until cheese is melted and bubbly with golden edges. Let the casserole rest for 5 minutes before serving.
  • Sprinkle fresh cilantro and preferred toppings just before serving.
