  • 1.5 cups long-grain white rice rinsed until water runs clear
  • 3 cups low-sodium chicken broth at room temperature
  • 2 lemons, zested and juiced separately

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt, adjust to taste
  • 0.5 teaspoon freshly cracked black pepper
  • 1 small onion finely diced

  • Pat the chicken thighs dry with paper towels for crispy skin. Rub with olive oil, then sprinkle dried oregano, salt, and black pepper evenly on both sides. Heat a large oven-safe skillet over medium-high heat. Add chicken skin side down and cook for 5-6 minutes without moving. Flip and cook another 3 minutes. Remove chicken and set aside. Lower heat to medium. Add diced onion and sweat for 3 minutes until softened but not browned. Add minced garlic and lemon zest; stir 30 seconds until fragrant.
  • Add rinsed rice to the skillet with onions, stirring to coat grains. Pour in chicken broth and lemon juice, stir. Return chicken thighs to pan, skin side up on top of rice.
  • Preheat oven to 375°F (190°C). Cover skillet with tight-fitting lid or foil. Transfer to oven and bake for 35-40 minutes until rice absorbs broth and chicken is cooked through. Remove and let rest 5 minutes before serving.
  • Sprinkle fresh parsley over chicken and rice before serving. Optionally add lemon wedges on the side. Pairs well with cucumber tomato salad or warm pita bread.
