  • 2 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced

  • 1 cup sour cream, full-fat or light depending on preference
  • 1 tsp Dijon mustard
  • 1 tbsp all-purpose flour
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped (for garnish)

  • Heat olive oil in a large skillet over medium-high heat until shimmering.
  • Add the chicken strips in a single layer. Cook without stirring for 2-3 minutes to get a little color on one side, then flip and cook another 2 minutes until just cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the sliced onion. Cook for 4-5 minutes until soft and translucent. Toss in garlic, cooking for 30 seconds until fragrant—don’t burn it.
  • Add mushrooms and cook, stirring occasionally, for about 5 minutes, or until they release their juices and start to brown.
  • Sprinkle the flour over the mushrooms and onions; stir well to coat everything evenly. This helps thicken the sauce later.
  • Slowly pour in the chicken broth while stirring to prevent lumps. Bring the mixture to a gentle simmer and cook for 3-4 minutes until slightly thickened.
  • Lower the heat to medium-low. Stir in sour cream and Dijon mustard until the sauce is smooth. Be careful not to let it boil to prevent the sour cream from curdling.
  • Return the cooked chicken to the skillet and stir to combine. Cook for 2 more minutes to warm everything through.
  • Taste and add salt and pepper as needed. Sprinkle fresh parsley on top before serving.
