  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 4 medium carrots, peeled and sliced into 1/2-inch pieces
  • 3 celery stalks, sliced
  • 4 medium potatoes, peeled and cut into 1-inch chunks
  • 3 cups beef broth (preferably low sodium)
  • 1 cup dry red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons all-purpose flour
  • Instructions

  • Pat beef dry with paper towels and season cubes with salt and pepper.
  • Heat vegetable oil in a large heavy-bottomed pot or Dutch oven. Brown beef in batches without overcrowding to develop a caramelized crust. Set beef aside.
  • In the same pot, sauté diced onion until soft and translucent, about 4–5 minutes. Add minced garlic last and cook until fragrant, about 30 seconds.
  • Deglaze the pot by pouring in red wine or a bit of beef broth to lift browned bits. Stir and reduce slightly for 2–3 minutes.
  • Stir in tomato paste, dried thyme, rosemary, and bay leaves, coating the mixture evenly.
  • Return browned beef with juices to the pot. Add beef broth to cover meat and vegetables. Bring to a boil.
  • Lower heat to a gentle simmer, partially cover, and cook for 1.5 to 2 hours, stirring occasionally, until beef is tender.
  • Add carrots, celery, and potatoes. Cover and simmer for 30–40 minutes until vegetables are tender but firm.
  • Make a slurry by stirring flour into a few tablespoons of cold water until smooth. Gradually stir into the stew and cook uncovered for 10 minutes until thickened, stirring often.
  • Adjust seasoning with salt and pepper. Remove bay leaves before serving. Let stew rest for a few minutes off heat for flavors to settle.
