  • 1 cup shredded green cabbage
  • 1/2 cup julienned carrots
  • 1/4 cup chopped green onions, whites and light greens only
  • 1/3 cup mayonnaise, plain or light
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon honey
  • Optional garnish: toasted sesame seeds and extra green onions
  • Instructions

  • Set out three shallow bowls. One with the flour, one with beaten eggs, and one loaded with panko breadcrumbs.
  • Toss each salmon cube first in flour, shaking off excess, then dip into the eggs fully, and finally coat in panko breadcrumbs. Press the breadcrumbs lightly to cover all sides.
  • Heat olive oil in a large non-stick skillet over medium heat. When hot, place the salmon cubes in batches without crowding. Fry for 2-3 minutes per side until golden brown and cooked through. Drain on paper towels.
  • While cooking salmon, whisk mayonnaise, sweet chili sauce, sriracha, and honey in a small bowl. Adjust spiciness or sweetness to taste.
  • Start with a base of warm cooked rice, layer cabbage, carrots, and green onions. Top with crispy salmon bites and drizzle generously with bang bang sauce.
