  • 1 cup dry quinoa, rinsed well to remove bitterness
  • 1 small butternut squash (about 2 cups diced into 1/2-inch cubes)
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt (plus extra for seasoning)
  • 2 cups baby kale leaves, washed and dried
  • 1/3 cup toasted pecans, roughly chopped
  • 1/4 cup dried cranberries, unsweetened if possible
  • 1/4 cup crumbled feta cheese (optional but recommended)
  • Maple Dressing:
  • 3 tablespoons pure maple syrup
  • 2 tablespoons apple cider vinegar
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • Freshly ground black pepper, to taste
  • Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Toss the diced butternut squash with olive oil, ground cinnamon, smoked paprika, and 1/4 teaspoon salt. Spread it out on the baking sheet in a single layer. Roast for 25-30 minutes until tender and caramelized, stirring halfway through.
  • While the squash roasts, place rinsed quinoa and 2 cups water in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and let sit covered for 5 minutes.
  • In a small bowl or jar, whisk together maple syrup, apple cider vinegar, olive oil, Dijon mustard, and freshly ground black pepper. Set aside.
  • Toast pecans in a dry skillet over medium heat for 3-5 minutes, stirring frequently. Set aside to cool.
  • Divide quinoa among bowls. Top with roasted butternut squash, baby kale, toasted pecans, dried cranberries, and crumbled feta cheese if using.
  • Pour desired amount of maple dressing over each bowl just before serving. Toss lightly if you want all ingredients coated.
