Ingredients

Scale
  • 8 ounces pasta (fettuccine or your favorite shape)
  • 4 ounces cream cheese, softened (cut into small cubes for easy melting)
  • 1 cup whole milk (room temperature for smooth mixing)
  • 1/2 cup freshly grated Parmesan cheese (packed tightly)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced finely
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)
  • Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  • In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned.
  • Lower the heat slightly and add the cubed cream cheese. Stir consistently until it softens and starts melting into the butter and garlic mixture.
  • Slowly pour in the whole milk while whisking to combine. Keep stirring to prevent lumps. Heat gently until the sauce thickens slightly and becomes smooth.
  • Stir in the grated Parmesan cheese. Add salt and black pepper to taste, being careful with salt due to the Parmesan.
  • Toss the cooked pasta into the sauce and stir well to coat every strand. If sauce is too thick, add a splash of reserved pasta water until the perfect creamy texture is achieved.
  • Cook together for 1-2 minutes to let pasta soak up the sauce. Sprinkle chopped fresh parsley on top before serving.
  • Notes

A creamy and rich Alfredo sauce made with cream cheese instead of heavy cream, creating a smooth and tangy pasta dish perfect for quick dinners and comforting meals.
